Vegetarian Tortilla Soup

Makes approx 2 gallons

 

Make a vegetable stock:
(Finely diced -- half bunch celery, one red onion, five carrots, two red bell peppers.  Saute slowly with butter, salt & pepper, add water – roughly two gallons)

 

Fry 8 corn tortillas in oil

Dice 3 large cooked potatoes

Put above in a blender with enough vegetable stock to process.

Blend in half a bunch of chopped cilantro.  Add cumin to taste (at least one teaspoon)

Mix the above into the vegetable stock and simmer for one hour.  Season to taste with salt, pepper, cumin and garlic.
