Vegetarian Tamale Pie

4 cups water
1 1/2 cups yellow cornmeal
1/4 teaspoon salt

1 can diced green chilies
1 can corn
1 cup diced red onion
1 cup diced bell pepper
1 cup shredded pepper jack cheese
1 cup shredded cheddar cheese
Oregano, to taste
Cumin, to taste
Salt, to taste
Pepper, to taste
Garlic powder, to taste

Combine water, cornmeal, and salt in a large sauce pan. Cook over medium-high heat until it comes to a boil and makes a “mush”, stirring constantly with a whisk.

Saute chilies, corn, onion, and bell pepper until onions are translucent and peppers are soft. Season with the spices and herbs to taste.

Spray a 9x13 pan and pour a layer of the cornmeal mush. Top with the vegetable mixture, and sprinkle with the two cheeses. Pour the final layer of cornmeal mush and top with the remaining amount of cheeses. Bake in a 350 degree oven until heated through and cheese has melted.
